Coconut Mango Banana Smoothie
A taste of the tropics and inspired by the energy giving smoothies in Parrot Cay, Turks & Caicos. I had the pleasure to take a beautiful hike through the resorts private banana and coconut plantations and enjoyed the fruits of their labour with home grown bananas and coconuts used in many of their delicious recipes. Enjoy and imagine yourself whisked away to your own private island.
Coconut Mango Banana Smoothie
Ingredients:
1 cup unsweetened almond milk / coconut milk blend (or any other non-dairy milk)
1 organic mango, sliced
1 organic ripe banana, peeled
1 tablespoon maple syrup (or any other sweetener of your choice, dates, raw honey, lucuma)
1 tablespoon extra virgin coconut oil
1 handful of ice
1 teaspoon vanilla extract (alcohol free)
several shakes of cinnamon
1/2 tablespoon unsweetened coconut flakes
Directions:
Add all of the ingredients to a blender and puree until smooth and creamy. Sprinkle some coconut flakes and add a chunk of pineapple for garnish. You can also add 1 scoop of your favorite vanilla protein powder and sip before or after a workout.
