Gluten Free Cinnamon Banana Pancakes
Who doesn't love pancakes on a Sunday morning or any morning. What I don't love is the bloated feeling after eating wheat, floury heavy foods. I came across these simple pancake recipes that are flourless, gluten free and low calorie. I played around with the ingredients to make it even better. I hope you enjoy them because these pancakes are easy, cheap, fast and delish!!
Cinnamon Banana Pancakes
Yield: 1 Pancake (1 Servings)
Ingredients:
1 Banana Completely mashed
2 Eggs Whisked
1/5 Cup Coconut Oil
7 Shakes Of Cinnamon (the more the better!) You can also use Pumpkin Spice
1/4 Cup Unsweetened Almond Milk or you can use 2 tablespoons of Almond Butter
Optional:
for more protein add a scoop of your favorite protein powder
add some ground flaxseed for more fiber benefits and helps the consistency of the pancake.
Instructions:
Turn a pan on low-medium heat and add olive oil.
Combine banana, egg, milk, and cinnamon into a bowl and mix.
After mixture is fairly smooth, pour into pan for about two minutes. Then flip! Cook until both sides are brown.
Serve with fresh fruit, fresh molasses, or whatever you prefer!
GLUTEN-FREE Chocolate Coconut Almond Meal Pancakes
Mix 3/4 cup of almond meal and two organic eggs in a bowl. Add 1/4 cup of raw organic cacao nibs and 2 tablespoons of organic coconut flakes.
Cook pancakes in organic coconut oil in a stainless steel frying pan. Serve with organic fruit, organic butter or organic maple syrup. Recipe makes 4 small pancakes.
