Reduced Fat Peanut Butter

 On my recent trip to Tucson, AZ I stayed at Miraval Resort & Spa. I was obsessed with this yummy peanut butter that I asked the Executive Chef for this simple recipe. Provides antioxidants, good fats, protein to aide in muscle growth and plenty of fiber and Vitamins E & B6.

Yield: 1 CUP | Servings:16 | Serving Size - 1T

Ingredients:

  • 1/3 C Organic Peanut Butter, Smooth

  • 1C Carrots, peeled and boiled until soft

Directions:

Blend Peanut Butter and boiled carrot chunks in a food processor.
