Watermelon Cucumber Cooler
On these hot summer days refresh with an energizing smoothie using these seasonal ingredients to stay cool.
Watermelon is a great remedy for avoiding dehydration, it cools and cleanses the body.
Cucumber is incredibly hydrating and charged with enzymes, B vitamins, vitamin C, nutrients, and electrolytes to build skin radiance from within. It's also full of beautifying silica, as well as caffeic acid, which has anti-inflammatory properties.
Mint promotes efficient digestion and is cooling!

You can also make a must have summer treat, paletas (ice pops) too. Take all ingredients and toss them in the blender. Whirl them around and then freeze your pops. You can get molds or use and ice tray, small cups or even muffin tins instead. To get the sticks to stand up straight, let the pops become slushy in the freezer first, then use a piece of foil fitted over the top to hold them in place. The sticks will poke out from the foil. To unmold the pops, run the mold under warm water for a few seconds. They should slide right out of the molds. Store pops in freezer bags or in a sealable freezer-safe container.
Watermelon Cucumber Cooler
Ingredients
1 cup of Coconut Water or Coconut Milk
2 cups chopped English cucumber (seeded) Peel if not organic
1/3 cup fresh mint leaves
1/4 cup fresh lime juice
3 cups of watermelon, peeled, seeded and cubed
for an extra kick add a small knob of ginger grated
Preparation
Place all ingredients in a blender in the same order. Process until smooth. Garnish with mint sprig and slice of watermelon.
Note: All ingredient measurements are approximate and should be adjusted to personal taste. I recommend all organic ingredients.
