Coconut Love Pancakes

I don't know a better way to share love then with  pancakes! And this recipe for gluten-free, grain-free coconut pancakes has never failed to charm and please. Simplicity at it's best, just top it off with your favorite syrup, fresh fruit and enjoy a healthy treat. Enjoy and Happy Valentine's Day ! 

Coconut Love Pancakes

  • 3 eggs

  • 3 tbsps organic butter, melted

  • 3 tbsps milk (I used coconut milk)

  • ½ mashed ripe banana (about 2 tablespoons)

  • 1 tsp sea salt

  • 2 tbsps coconut flour

  • 1/2 tsp baking powder

  • 1 tsp honey

  • cinnamon (optional)

  • shredded coconut (optional)

  • fresh fruit , cacao nibs or regular chocolate chips. (mix into batter or garnish)

Whisk the eggs, butter, milk, banana , honey and sea salt. Stir in the baking powder and coconut flour. Melt a knob of organic butter  or coconut oil in a large frying pan and spoon in roughly 2 large tbsps of the pancake batter. Fry until brown on both sides. I added chocolate chips and shredded coconut to the mix. ( Makes 6)
